When a dish is brightened with citrus, vinegar, or sharp cheeses, it requires a wine that can stand tall. A wine with lower acidity than the food will taste “flabby” or flat. In this module, we look for a “bridge” where the zest in your glass meets the zest on your plate.
Tannins are the drying compounds found in red wine skins that have a natural affinity for protein and fat. When you sip a bold red with a marbled steak, the tannins bind to the proteins, softening the wine’s “grip” on your tongue while simultaneously cutting through the richness of the meat.
Alcohol acts as a fuel for spice. Pairing a high-alcohol wine with a spicy Cape Malay curry can result in an unpleasant “burn.” To soothe the heat, we teach the “Fire & Ice” method: looking for low alcohol and a touch of residual sugar.
